Auberge Saint-Antoine Restaurant Le PanacheIn July 2004, the Auberge Saint-Antoine opened a restaurant called Panache. This name reflects the elegance and distinction of an establishment that has rapidly gained an enviable reputation as one of the city’s finest restaurants. In its first year, Panache won the city’s Best New Restaurant award.

Panache’s dining room is located in the 19th century Hunt maritime warehouse, a building distinguished by its stone walls and massive wood beams. This historic building was derelict when the Price family acquired it in 1990. It has since been restored with utmost care to preserve and display the treasures of its heritage.

In this discreet corner of the hotel, Panache offers a wonderful vantage point from which to take in the lively panorama of the St. Lawrence River and its fabulous views. At midday, daylight floods in through generous windows. The atmosphere is convivial and relaxed, the staff attentive, the ambiance lively without being noisy. As evening falls, the mood is softened with beautiful lighting provided in part by the artisans of the nearby La Mailloche glassworks.

Weather permitting, guests can eat at one of the tables set out on the terrace. In cold weather, Panache is kept warm and cosy with a gas fireplace. Here, guests can sink into a comfy armchair or relax into velvety sofas arranged around tables set with white tablecloths, crystal and silverware. Access to a mezzanine via the magnificent wrought iron staircase completes this setting.

The Executive Chef of Panache, François Blais, has quickly gained a reputation for culinary excellence and innovation. His creative and bold approach to reviving our region’s traditional dishes has revealed this young chef’s enormous talent.

The menu is traditional French Canadian cuisine “with a twist”; a revival conceived by Executive Chef, François Blais. He draws inspiration from Québec’s produce, varying the menu according to what is in season.

The wine list at Panache has been developed with great care and offers a selection from all over the world. Canadian and Québec wines are featured prominently, as well as a judicious selection of ice wines available by the glass.
