1st Cheese Ever Made in America!
It was on Île d’Orléans that the first cheese in America was made from 1635. And it is the love for heritage and science that have allowed the rebirth of this cheese which had disappeared from the market for 40 years.
“Le fromage de l’isle d’Orléans is a true local product since it has been shaped by its surroundings and inhabitants. With respect of our ancestors’ know-how, we welcome visitors in period costumes in a wood pegs, mortice and tenon joints building built according to the construction techniques of the 17th century. ” says Jocelyn Labbé, cheese maker and owner of the company.
Three Types of Cheese
Made using traditional methods, Le fromage de l’isle d’Orléans can be enjoyed in three ways which corresponds to the different stages of making. At the first stage, we get a fresh cheese: La Faisselle. Dried during 4 to 5 additional days, we get a cheese which has to be fried on a pan: Le Paillasson. Aged in our maturing cave in specific conditions, the cheese becomes a rind washed soft cheese: Le Raffiné. The latter will be put on the market in the future.
At the cheese factory, you can find La Faisselle and Le Paillasson, different local products, homemade spruce beer, etc. At the moment, only Le Paillasson is distributed in various points of sales on Île d’Orléans and in Quebec City, as well as in many other cities throughout Quebec.
